If you can’t “make it”…just “fake it”…

Let’s face it, not all of us are as clever as Martha Stewart or Donna Hay. Schedules get crazy and time slips away but that doesn’t mean you can’t impress mum on her special day. I’ve come up with two quick and easy treats that you can present to mum and they require zero baking, minimal mixing and making.  Not only are the quick to make but they look gorgeous too, that’s all that really matters right …???

The prettiest “No Bake” cake…

What you’ll need

  • Two, 2x packs of round sponge cakes from Woolworth's (Coles doesn’t carry the round ones)
  • 300ml of Pure or Thickened cream for whipping
  • Berries
  • Vanilla Ice Cream
  • Palette Knife for Cakes
  • Flowers that are safe and clean to top on cakes (such as these garden roses)

 

Step 1: Stack Sponge. So Woolworth’s have some pretty tasty sponge cakes and they are a perfect size and shape you will need.  If you don’t have a cake stand, stack them onto a large plate as we did with our Casa Blanca Serving Platter. I like to stack 3 sponges and add berries and whipped cream in between each layer.

 

Step 2: Whipping. Add the pure or thickened cream to a cold bowl and whip with a mixer until fluffy and stiff. This may take a couple of minutes so don’t give up.

**I recommend whipping the cream the same day and quickly covering the cake once you have whipped it so that it doesn’t melt or curdle. Homemade whipping cream seems to work the best. I have tried to do it with ready-made icing and whipped cream from the can but have had no luck.

 

Step 3: Frosting the cake.  Start from top to bottom.  Cover the cake with the whipped cream so that you completely cover the sponge. 

**I highly recommend doing this step and the next step with a Cake Palette Knife or Straight Spatula. It evenly covers the cake and leaves you with a clean smooth finish.

 

Step 4: Scraping. You can either keep it fully frosted or scrape away the sides to make a naked cake as we did above.  Run around the side of the cake with your palette knife to scrape away the whipped cream and… voila!

 

Step 5: Flowers. This is my Favorite bit. Top off your cake with safe and clean florals for a pretty decoration. We used non-toxic gardens roses and make sure you clean off any sprays or pesticides.

 

Step 6: Cut and Serve with our In Bloom Cake Serving Set onto our Casa Blanca Side Plates. Top with fresh berries and vanilla ice cream and enjoy!

A Lovley Lemon Lime and Bitters…

What you’ll need

  • Lemon Lime and Bitters Drink or Sparkling Water
  • Lime
  • Mint
  • Thyme
  • Ice

 

Step 1: Tumblers. Presentation is key to these quick treats.  Dress up your drinks by serving them in our pretty Seville Tumblers.  Or surprise mum with a new set of these beauties, they are the perfect gift.

 

Step 2: Mint, Lime & Ice.  I like to serve special drinks with ice for a little bit of sparkle. Mix in mint and lime to your choice of beverage for a refreshing taste and lovely look.

 

Step 3: Finishing touch. Place a sprig of thyme on the top. Thyme or herb sprigs are always so charming and give off a beautiful fragrance.
